Coconut cookies with a chocolate drizzle - a delightful treat for kids and a breeze to whip up.
Ingredients:
  • 0.75 cup white sugar
  • 1 teaspoon almond extract
  • 2.25 cups all-purpose flour
  • 1 cup sweetened flaked coconut
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 2 baking sheets by lining them with parchment paper.
  • In a bowl, whip together butter, shortening, and sugar until creamy. Add almond and vanilla extracts, salt, and gradually mix in flour until smooth. Gently fold in coconut into the dough.
  • Use a heaping tablespoon to portion out dough, roll into balls, and place them 2 inches apart on baking sheets. Dip the bottom of a glass in flour and flatten the cookies to 1/4 inch thick.
  • Bake until lightly browned, about 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 2-3 minutes before removing.
  • As the cookies bake, melt half of the chocolate chips in a microwave-safe bowl for 30 seconds; stir. Repeat heating and stirring until the chocolate is melted, smooth, and warm. Add the rest of the chocolate chips to the melted chocolate and continue heating and stirring until everything is melted and just warm. Transfer the melted chocolate to a resealable plastic sandwich bag and snip a small corner off with scissors.
  • Drizzle melted chocolate over warm cookies in a zigzag pattern using a pastry bag. Let the cookies sit on cooling racks for about 30 minutes to allow the chocolate to harden.
