Chef John's famous New Orleans fried chicken is both simple and stunningly delicious - a must-try at home!
Ingredients:
  • 4 teaspoons fine salt
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 3 large eggs
  • 1/4 cup water
  • 1 (4 pound) whole chicken, cut into 8 pieces
  • 2 quarts vegetable oil
Instructions:
  • Combine 4 teaspoons of salt with black pepper, garlic powder, and cayenne in a small bowl; set aside for later use.
  • Thoroughly blend eggs, water, and 2 tablespoons of spice mix in a large mixing bowl to coat all chicken pieces evenly.
  • Prepare the whole chicken by cutting it into serving-size pieces: 2 breast halves, 2 thighs, 2 drumsticks, and 2 wings. Alternatively, you can opt for 4 pounds of pre-cut bone-in, skin-on chicken pieces.
  • Coat chicken pieces evenly in the egg marinade by tossing thoroughly. Press the chicken down into the bowl to ensure full coverage with the marinade.
  • Wrap the dish with plastic wrap and let it marinate in the fridge for 12 to 24 hours. Remember to toss the chicken pieces occasionally while marinating.
  • Combine the flour and 1 teaspoon of salt in a shallow pan.
  • Heat the vegetable oil for deep frying to 350 degrees F (180 degrees C).
  • Once ready to fry, use tongs to remove the chicken from the marinade, allowing any extra marinade to drip off. Coat the chicken generously with seasoned flour, shaking off any excess, before carefully placing it in the hot oil.
  • Fry the breast pieces first for 3 to 4 minutes in a large enough fryer. Then add the thighs, legs, and wings. Fry all the chicken pieces for 15 to 18 minutes until no longer pink in the center and juices run clear. Use an instant-read thermometer to ensure the chicken reaches at least 165 degrees F (74 degrees C).
  • Place the chicken on a rack to drain excess oil, then allow it to cool for 5 minutes before serving.
