Celebrate spring with fresh dandelion greens, best picked early for tenderness, including the edible flower buds.
Ingredients:
  • 1 pound bacon, diced
  • 5 pounds white potatoes, peeled and cubed
  • 3 tablespoons butter
  • salt and pepper, to taste
  • 1 pound torn dandelion greens
  • 1 medium onion, diced
  • 1 egg, lightly beaten
  • 0.5 cup white vinegar
  • 1 tablespoon white sugar
  • 1 tablespoon all-purpose flour
Instructions:
  • Boil a pot of salted water until bubbling. Add potatoes and cook for about 15 minutes until tender but firm. Drain, mix with butter, and season generously with salt and pepper.
  • In a large, deep skillet over medium-high heat, cook the bacon until evenly browned. Transfer the bacon to a paper towel-lined plate to drain, and reserve the skillet with the bacon grease.
  • Combine the dandelion greens and onion in a large bowl, tossing gently.
  • Whisk egg, vinegar, and sugar in a bowl. Season with salt and pepper. Stir in skillet with bacon grease. Add diced bacon and flour. Whisk for 1 minute until thick like salad dressing. Pour over dandelions and toss to coat. Serve over potatoes.
