Celebrate spring with fresh dandelion greens, best picked early for tenderness, including the edible flower buds.
Ingredients:
1poundbacon, diced
5pounds white potatoes, peeled and cubed
3tablespoons butter
salt and pepper, to taste
1poundtorn dandelion greens
1 medium onion, diced
1egg, lightly beaten
0.5 cupwhite vinegar
1tablespoonwhite sugar
1tablespoonall-purpose flour
Instructions:
Boil a pot of salted water until bubbling. Add potatoes and cook for about 15 minutes until tender but firm. Drain, mix with butter, and season generously with salt and pepper.
In a large, deep skillet over medium-high heat, cook the bacon until evenly browned. Transfer the bacon to a paper towel-lined plate to drain, and reserve the skillet with the bacon grease.
Combine the dandelion greens and onion in a large bowl, tossing gently.
Whisk egg, vinegar, and sugar in a bowl. Season with salt and pepper. Stir in skillet with bacon grease. Add diced bacon and flour. Whisk for 1 minute until thick like salad dressing. Pour over dandelions and toss to coat. Serve over potatoes.
