Oven-roasted pork loin with sauerkraut, apples, and brown sugar for a savory and sweet twist on a classic dish.
Ingredients:
  • cooking spray
  • 1 (2 pound) boneless pork loin roast
  • 2 (27 ounce) cans sauerkraut (such as Silver Floss®), undrained
  • 2 McIntosh apples, cored and cut into wedges
  • 0.25 cup brown sugar
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect temperature.
  • Prepare a large roasting pan by spraying it with cooking spray. Place the pork roast in the pan and surround it with sauerkraut. Top the sauerkraut with apple wedges. Sprinkle brown sugar over the roast and apples before covering the pan with aluminum foil.
  • Roast in the preheated oven for about 2 hours, or until the center is slightly pink and an instant-read thermometer reads at least 145°F (63°C).
  • Take the roast out of the oven and let it rest in a cozy spot for about 10 minutes before slicing.
