One-pan mega chocolate cookie - decadent and delicious!
Ingredients:
  • 200g butter, chopped
  • 200g (1 cup, firmly packed) brown sugar
  • 1 egg, lightly whisked
  • 8.80 gm vanilla essence
  • 225g (1 1/2 cups) plain flour
  • 30g (1/4 cup) cocoa powder
  • 2.50 gm bicarbonate of soda
  • 35g (1/3 cup) desiccated coconut
  • Mixed coated chocolate buttons, to decorate
Instructions:
  • Preheat your oven to 180C/160C fan forced. Melt butter and sugar in a 25cm ovenproof enamel or cast iron frying pan over medium-low heat until combined. Let it cool slightly for 10 minutes after removing from heat.
  • Mix the egg and vanilla into the butter mixture. Sift the flour, cocoa, and bicarbonate of soda into the pan. Add the coconut and gently stir to combine. Smooth the surface, sprinkle with the chocolate buttons, and bake for 25 minutes or until crispy. Let it cool in the pan before cutting into wedges.
