Indulge in decadent chocolate peanut butter cupcakes for a delightful dessert.
Ingredients:
  • 3/4 cup granulated sugar
  • 3 tablespoons creamy peanut butter
  • 1/4 cup fat-free sour cream
  • 1 egg
  • 1 egg white
  • 1 cup Gold Medal™ flour
  • 1/4 cup baking cocoa
  • 1/2 cup hot water
  • 1/2 teaspoon baking soda
  • 1/4 cup miniature semisweet chocolate chips
  • Powdered sugar, if desired
Instructions:
  • Preheat oven to 350°F and line a muffin pan with 12 paper baking cups.
  • In a large bowl, use an electric mixer to blend granulated sugar, peanut butter, sour cream, egg, and egg white until smooth. Then, mix in the rest of the ingredients on low speed until just combined. Divide the batter among muffin cups.
  • Bake for 15 to 20 minutes until a toothpick comes out clean. Remove from pan and cool on a wire rack for about 30 minutes. Finish by sprinkling the tops with powdered sugar.
