Doug's Crawfish Pie

Elevate your dish with zesty crawfish and flaky puff pastry, for a fun and flavorful experience!
Ingredients:
  • 1 cup butter
  • 0.5 cup flour
  • 1 sweet onion (such as Vidalia®), chopped
  • 1 green bell pepper, chopped
  • celery, chopped
  • 4 green onions, chopped
  • 0.5 cup vegetable broth
  • 3 tablespoons tomato paste
  • 2 pounds cooked and peeled whole crawfish tails
  • 3 cloves garlic, chopped
  • 0.25 cup fresh parsley, chopped
  • salt and ground black pepper to taste
  • cayenne pepper to taste
  • hot sauce to taste
  • 12 puff pastry shells
Instructions:
  • In a large skillet over medium heat, melt butter until golden brown. Stir in flour and cook for about 10 minutes. Add sweet onion, green pepper, celery, and green onions. Cover and simmer on low heat for one hour, stirring occasionally.
  • Combine vegetable broth and tomato paste, simmer until creamy. Add crawfish tails, garlic, and parsley, simmer for 15 minutes until tender. Season with salt, black pepper, cayenne pepper, and hot sauce to taste.
  • Preheat your oven to 400°F (200°C). Bake the puff pastry shells for 5-7 minutes until they puff up and turn slightly golden. Remove from oven and let them cool. Gently remove and set aside the center tops for later. Reduce oven temperature to 350°F (175°C).
  • Generously fill puff pastry shells with the mixture. Use any leftover filling to make 6 small pies and 1 large crawfish pie by covering them with puff pastry shells. Arrange all pies on a baking sheet.
  • Bake for approximately 15 minutes until the shells turn golden brown and the filling glistens beautifully.
