Upgrade your cake with plump cherries soaked in almond extract for a flavor that pairs perfectly with your morning brew.
Ingredients:
  • 2 teaspoons baking powder
  • 0.5 cup chopped dried cherries
  • 0.5 cup hot water
  • 0.5 teaspoon almond extract
  • 1.5 cups all-purpose flour
  • 1 (8 ounce) container vanilla yogurt
  • 0.5 cup vegetable oil
  • 0.25 cup chopped pecans
Instructions:
  • In a bowl, mix cherries, hot water, and almond extract, and let it sit for 20 minutes. Drain the cherries and pat them dry with paper towels. Set aside.
  • Combine flour, salt, baking powder, and sugar in a large bowl. Mix in yogurt, eggs, and oil until well combined. Gently fold in cherries. Transfer batter to a greased and floured 9-inch round cake pan.
  • Combine pecans with a tablespoon of white sugar, then generously sprinkle the mixture over the batter in the pan.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes until a wooden pick comes out clean. Let it cool in the pan on a wire rack for 10 minutes. Serve warm or at room temperature.
