Try this delectable dried pear hazelnut loaf for a tasty treat.
Ingredients:
  • 2 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 6 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 1 teaspoon grated lemon peel
  • 1 teaspoon grated gingerroot
  • 2 eggs
  • 3/4 cup chopped dried pears
  • 1/2 cup chopped hazelnuts (filberts), toasted, skins removed
  • 1/2 cup packed brown sugar
  • 1/4 cup cold butter
  • 2/3 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 2 teaspoons milk
Instructions:
  • Preheat your oven to 375°F and generously coat a 9x5-inch loaf pan with cooking spray.
  • Mix 2 1/4 cups flour, granulated sugar, baking powder, and salt in a large bowl. In a medium bowl, whisk together buttermilk, 6 tablespoons butter, vanilla, lemon peel, gingerroot, and eggs until well blended. Combine with the flour mixture until blended, then stir in pears and hazelnuts. Spread the batter in a pan.
  • Combine brown sugar and 1/4 cup of butter in a medium bowl until fully incorporated. Add 2/3 cup of flour; use your fingers to create clumps. Sprinkle the topping over the batter.
  • Bake for 1 hour to 1 hour 5 minutes until a toothpick inserted in the center comes out clean. If needed, cover with foil during the last 25 minutes to prevent overbrowning. Allow the loaf to cool for 10 minutes, then remove from pan to a cooling rack. In a small bowl, combine powdered sugar and milk until you get a thin drizzling consistency. Drizzle the glaze over the loaf and let it stand for 10 minutes before serving.
