Swedish cardamom cookies with browned butter and blanched almonds.
Ingredients:
  • 1 cup butter
  • 0.75 cup white sugar
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon ground cardamom
  • 2 cups all-purpose flour
  • 50 blanched whole almonds, toasted
Instructions:
  • Preheat your oven to 350 degrees F (180 degrees C).
  • In a large heavy skillet, melt the butter over medium-low heat without stirring for approximately 15 minutes until it turns a light tan color. Transfer the melted butter to a mixing bowl and place the bowl over another bowl filled with cold water to chill until firm.
  • Combine sugar, baking powder, vanilla, and cardamom in the mixture; beat until fully incorporated. Next, gently fold in the flour.
  • Roll dough into 1-inch balls and arrange them 1 inch apart on an ungreased cookie sheet. Place an almond on top of each ball and gently press it into the dough.
  • Bake for 12 to 15 minutes until beautifully golden brown. Transfer to a wire rack to cool.
