Mexican-inspired roast beef sandwich on bolillo bun with chipotle sauce for dipping.
Ingredients:
  • 12 ounces chipotle cooking sauce (such a Knorr®)
  • 1 (14 ounce) can reduced-sodium beef broth
  • 0.25 cup chopped fresh cilantro
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 pound thinly sliced deli roast beef
  • 4 bolillo rolls, halved and lightly toasted
  • 4 sprigs fresh cilantro, or to taste
Instructions:
  • In a saucepan, mix chipotle cooking sauce, beef broth, and 1/4 cup chopped cilantro. Bring it to a boil, then simmer over medium-low heat for 10 minutes, stirring occasionally.
  • In a skillet over medium-high heat, saute onion in oil until softened, around 5 minutes. Add garlic and cook for 1 minute. Stir in roast beef and 1/4 cup of chipotle sauce mixture, cooking and stirring constantly until heated through, approximately 2 minutes.
  • Divide the remaining chipotle sauce mixture among 4 bowls for dipping. Pile the roast beef mixture onto the bottom half of each bun, add a cilantro sprig on top, and cover with the other half of the bun. Serve sandwiches with the sauce for dipping.
