Drowned Beef Sandwich with Chipotle Sauce (Torta Ahogada)

Mexican-inspired roast beef sandwich on bolillo bun with chipotle sauce for dipping.
Ingredients:
12ounces chipotle cooking sauce (such a Knorr®)
1 (14 ounce) canreduced-sodium beef broth
0.25 cupchoppedfresh cilantro
2tablespoons vegetable oil
1onion, thinly sliced
3clovesgarlic, minced
1poundthinly sliceddeli roast beef
4bolillo rolls, halved and lightly toasted
4sprigsfresh cilantro, or to taste
Instructions:
In a saucepan, mix chipotle cooking sauce, beef broth, and 1/4 cup chopped cilantro. Bring it to a boil, then simmer over medium-low heat for 10 minutes, stirring occasionally.
In a skillet over medium-high heat, saute onion in oil until softened, around 5 minutes. Add garlic and cook for 1 minute. Stir in roast beef and 1/4 cup of chipotle sauce mixture, cooking and stirring constantly until heated through, approximately 2 minutes.
Divide the remaining chipotle sauce mixture among 4 bowls for dipping. Pile the roast beef mixture onto the bottom half of each bun, add a cilantro sprig on top, and cover with the other half of the bun. Serve sandwiches with the sauce for dipping.
