"Small pretzel bread loaves are boiled in baking soda water for a shiny brown crust before baking."
Ingredients:
  • 1 tablespoon dark brown sugar
  • 1 tablespoon honey
  • 1 (.25 ounce) package active dry yeast
  • 1 cup warm water - 100 to 110 degrees F (40 to 45 degrees C)
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons half-and-half
  • 1.5 teaspoons salt
  • 2 cups bread flour, or more if needed
  • 1 teaspoon unsalted butter
  • cooking spray
  • 5 tablespoons baking soda
  • 3 tablespoons honey, or to taste
  • 0.5 teaspoon salt
  • 1 teaspoon unsalted butter, melted
Instructions:
  • Combine dark brown sugar, honey, and yeast in warm water in a large bowl, stirring until the sugar and yeast are dissolved. Allow the mixture to rest until a foamy layer forms on top, approximately 10 minutes. Then, mix in melted butter, half-and-half, and salt into the yeast mixture.
  • Combine 1 cup of flour with wet ingredients until a wet, sloppy dough forms. Transfer dough to a floured surface and gently knead in the remaining 1 cup of flour until dough is slightly sticky, around 10 minutes. Adjust by adding more flour if needed. Shape dough into a ball.
  • Prepare a large bowl by greasing it with 1 teaspoon of butter. Place the dough ball in the bowl and gently swirl it to ensure it is lightly coated with butter. Cover the bowl with plastic wrap and allow the dough to rise in a warm area until doubled in size, which will take around 1 to 1.5 hours.
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and coat a baking sheet with cooking spray.
  • Combine baking soda and 3 tablespoons of honey into a pot of water and bring to a vigorous boil. Deflate dough and split in half. Shape each half into a small loaf. Gently lower one loaf into the boiling water and cook for 30 seconds per side until it floats. Lift out the loaf, let excess water drip off, and transfer to a baking sheet. Repeat the same process for the second loaf.
  • Lightly sprinkle salt over each loaf for enhanced flavor. Make an X-shaped cut on top of each loaf using a sharp knife.
  • Place in the center of a preheated oven and bake for 10 minutes. Lower the oven temperature to 400°F (205°C) and bake for an additional 10 minutes, or until the crust is golden brown and shiny, and the loaves are fully cooked. For a softer crust, brush melted butter on top of the loaves.
