Quick and elegant duck and noodle dinner ready in just 30 minutes.
Ingredients:
  • 4 x 180g duck breast fillets (see note), skin scored
  • 43.20 gm hoisin sauce
  • 270g packet soba noodles
  • 80ml soy sauce
  • 20.00 ml sesame oil
  • 16.00 gm brown sugar
  • Juice of 1 lime
  • 1 mango, sliced
  • 500.00 ml watercress sprigs
Instructions:
  • Preheat the oven to 180°C to create the perfect cooking environment.
  • 1. Season the duck and place in a non-stick ovenproof frypan, skin-side down over low heat until the skin is crisp and most of the fat has rendered, about 5-6 minutes. 2. Brush the skin with hoisin sauce, then bake in the oven for 6 minutes until cooked but still pink inside. 3. Rest the duck, covered loosely with foil, for 5 minutes before serving.
  • While the noodles are cooking according to the package instructions, prepare the dressing by whisking together soy sauce, oil, sugar, and lime juice. Drain the noodles and toss them with half of the dressing.
  • Slice the duck thinly and present it with mango, watercress, and noodles. Finish by drizzling with the remaining dressing.
