Ingredients:
  • 110g (2/3 cup) hazelnuts
  • 80g (1/2 cup) sesame seeds
  • 40.00 ml coriander seeds
  • 40.00 ml cumin seeds
  • 2 tsp freshly ground black pepper
  • 2.40 gm flaked sea salt (like Maldon brand)
  • Extra virgin olive oil, to serve
  • Crusty bread, to serve
Instructions:
  • Heat the oven to 180°C.
  • Spread hazelnuts on a baking tray and toast in a preheated oven for 3-4 minutes until fragrant. Rub the hazelnuts in a clean tea towel to remove skins.
  • Add the toasted hazelnuts to a food processor and pulse until they are roughly chopped. Transfer the chopped hazelnuts to a large bowl.
  • In a medium frying pan over medium heat, toast the sesame seeds by stirring occasionally for 1-2 minutes until they turn golden brown. Transfer to the bowl with the hazelnuts.
  • Toast coriander and cumin seeds in a pan over medium heat until fragrant and starting to pop, about 1-2 minutes. Crush the seeds in a mortar and pestle or spice grinder. Combine with pepper and salt in hazelnut mixture.
  • Enjoy dukkah with a drizzle of extra virgin olive oil and crusty bread.
