Dukkah-crusted lamb chops with fruit and nut couscous

Middle Eastern-inspired chops with fruit, nuts, and spices for fast, flavorful cooking.
Ingredients:
  • 50g pistachio dukkah
  • 8 (about 600g) lamb loin chops
  • 18.20 gm olive oil
  • 250g couscous
  • 55g (1/3 cup) finely chopped mixed dried fruit
  • 250ml (1 cup) boiling water
  • 40g (1/4 cup) pistachio kernels, coarsely chopped
  • 3.60 gm vegetable salt (see note)
  • 1/2 tsp chilli powder
  • 20.00 ml pistachio dukkah, extra
  • 1 bunch rocket, ends trimmed
  • 125.00 ml fresh coriander leaves
  • 70g (1/4 cup) Greek Style Yoghurt
Instructions:
  • Spread the dukkah on a plate and coat both sides of the lamb by pressing into the mixture. Heat oil in a large frying pan over medium-high heat, then cook the lamb for 4 minutes on each side for a medium doneness or to your preference.
  • In a large heatproof bowl, combine the couscous and dried fruit. Pour in the boiling water, cover, and let it sit for 2 minutes until all the liquid is absorbed. Fluff the grains with a fork, then mix in the pistachios, vegetable salt, chili powder, and extra dukkah.
  • Divide the flavorful couscous mixture, peppery rocket, and tender lamb among individual plates. Sprinkle with fresh coriander and serve with a dollop of cooling yogurt.
