Whip up simple blueberry cream tarts in no time!
Ingredients:
  • 125g blueberries
  • 80ml orange juice
  • 40.00 gm caster sugar
  • 1/2 tsp vanilla bean paste
  • 5.00 gm cornflour
  • 2 x 150g pkts Make At Home Tart Shells
  • 300ml thickened cream
  • Blueberries, extra, to serve
Instructions:
  • In a medium saucepan over medium heat, combine blueberries, orange juice, sugar, and vanilla. Cook and stir for 6-8 minutes until blueberries just soften. In a small jug, mix cornflour with 1 tbsp water. Add to blueberry mixture and stir for 2-3 minutes until it thickens. Remove from heat and let cool completely.
  • Fill the tart shells with the blueberry mixture. Whip the cream with an electric mixer until stiff peaks form, then transfer it to a sealable plastic bag. Snip off a corner and pipe the cream onto the tarts. Finish by garnishing with fresh blueberries and serve.
