Fluffy broccoli frittata: Quick, family-friendly brunch made with pantry staples.
Ingredients:
  • 3 cups bite-size broccoli pieces
  • 8 large eggs
  • 0.25 cup milk
  • 1 teaspoon paprika
Instructions:
  • Preheat the oven to 375F (190C).
  • Bring a large pot of water to a boil, then cook the broccoli until tender, about 5 minutes. Drain and cool for 10 minutes before transferring to an oven-proof pan with 2-inch sides.
  • Combine eggs, milk, paprika, salt, and pepper in a large bowl and whisk until fully blended. Pour the mixture over the broccoli in the pan.
  • Bake until the edges are golden and the center is set, about 35 minutes in the preheated oven.
