Easy and delicious carrot cake cupcakes made with Betty Crocker™ Carrot Cake Mix and cream cheese frosting. Bursting with coconut, nuts, and raisins - a perfect springtime treat ready in just 20 minutes!
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Carrot Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1/2 cup flaked coconut
  • 1/2 cup chopped nuts
  • 1/2 cup raisins
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Cream Cheese Frosting
Instructions:
  • Preheat the oven to 375°F (350°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups.
  • Prepare the cake mix according to the instructions on the box. Gently fold in the coconut, nuts, and raisins. Distribute the batter evenly into the muffin cups, filling each about two-thirds full.
  • Bake for 15 to 18 minutes, then cool in pans for 10 minutes. After, transfer cupcakes to a cooling rack and let cool completely for about 30 minutes. Finally, frost the cupcakes and store them loosely covered at room temperature.
