Creamy carrot soup ready in 30 minutes - a deliciously sweet and simple dish!
Ingredients:
  • For the soup
  • 2 tablespoons unsalted butter
  • 1 large white onion, chopped
  • 2 pounds carrots, peeled and chopped
  • 3 cloves garlic, chopped
  • 1 teaspoon dried thyme
  • 4 cups vegetable stock
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper (optional)
  • 4 tablespoons heavy cream, divided
  • For garnish
  • Paprika
  • Fresh chives, minced
  • DAD ADD: Cheesy Toast Dippers
  • 8 slices baguette, sliced 1/2-inch thick
  • 2 tablespoons olive oil
  • 1/2 cup parmesan cheese, finely grated
Instructions:
  • Preheat your oven to 400°F for the Cheesy Toast Toppers.
  • In a large pot over medium heat, melt the butter and sauté the onions until translucent, about 3 to 4 minutes, being careful not to brown them. Season with a pinch of salt. Add the carrots, garlic, and dried thyme, and stir for 30 seconds until the garlic is fragrant.
  • Pour the stock into the pot and bring it to a gentle simmer. Cover and cook for 15 minutes until the carrots are very tender.
  • For the cheesy toast dippers: Lay out baguette slices on a baking sheet, drizzle with olive oil, and generously sprinkle with finely grated Parmesan cheese. Bake at 400°F until edges are golden brown and Parmesan cheese is lightly golden, about 10-12 minutes. Remove from oven and set aside.
  • To finish the soup, once the carrots are tender, blend it until smooth using an immersion blender. If you don’t have one, let the soup cool slightly and blend in batches with a standard blender. Return the blended soup to low heat and season with salt and white pepper, if desired.
  • To serve the soup, ladle into bowls, swirl in a tablespoon of heavy cream, garnish with paprika and fresh chives, and add a cheesy toast dipper. Store leftovers in the fridge for up to 5 days or freeze in ziptop bags for up to 6 months. Reheat gently on the stovetop.
