Creamy carrot soup with warm spices served piping hot and garnished with fresh parsley.
Ingredients:
  • 1 tablespoon all-purpose flour
  • 1 cup half-and-half
  • 1.5 cups vegetable broth
  • 2.5 cups sliced carrots
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 1 teaspoon red pepper flakes
  • salt to taste
  • ground black pepper to taste
Instructions:
  • Steam the carrots until they are perfectly tender.
  • Blend together tender, cooked carrots and 3/4 cup of broth in a blender or food processor until creamy. Reserve for later use.
  • In a saucepan over medium heat, melt butter. Stir in flour, parsley, basil, and red pepper flakes. Pour in half-and-half cream, stirring until slightly thickened and bubbly. Mix in carrot mixture and remaining broth. Season with salt and black pepper. Add milk or water to thin, if necessary.
