Easy Cauliflower Soup with Fresh Ginger

Quick and easy cauliflower ginger soup, perfect for busy nights. Pair with crusty bread for a delightful meal.
Ingredients:
  • 2 teaspoons olive oil
  • 0.5 cup chopped onion
  • 1 large head cauliflower, cut into florets
  • 3 cups chicken stock
  • 1 (1 inch) piece fresh ginger, chopped
  • 1.5 teaspoons sea salt
  • ground black pepper to taste
Instructions:
  • In a large pot over medium heat, sauté fragrant onion in oil for 1 minute. Add cauliflower, cook until slightly tender for 10 minutes, stirring occasionally. Season with ginger, salt, and black pepper, then add chicken stock. Bring to a boil, cover, and simmer for 30 minutes until cauliflower is tender. Allow to cool slightly before serving.
  • Carefully transfer the soup to a blender, making sure not to fill it more than halfway. Secure the lid and pulse a few times before blending until smooth in batches. Reheat in a pot over low heat and serve hot.
