Tangy apple and sweet strawberries elevate this simple chicken salad with a crunchy candied walnut topping.
Ingredients:
  • 20g butter
  • 25.60 gm coconut sugar
  • 65g walnuts
  • Pinch of salt flakes
  • 1 barbecue chicken, skin and bones removed
  • 1 punnet strawberries, halved or sliced
  • 100g baby spinach
  • 1 small red apple, thinly sliced
  • 1 small red onion, halved, thinly sliced
  • 2 tsp balsamic vinegar
  • 18.20 gm olive oil, to serve
Instructions:
  • Prepare a tray with non-stick baking paper. Melt butter in a small non-stick frying pan, then mix in sugar until melted. Add walnuts and salt and cook until walnuts are lightly toasted and the mixture is bubbling. Transfer the walnut mixture to the tray and let it cool.
  • Break the chicken into smaller pieces. Mix the chicken, strawberry, spinach, apple, and onion in a large bowl. Whisk together balsamic vinegar and oil. Season, and drizzle the dressing over the salad.
  • Crush the walnuts and sprinkle over the salad right before you serve.
