Whip up a delicious cheesy chicken enchilada casserole using rotisserie chicken and Hamburger Helper™ for a quick and tasty dinner.
Ingredients:
  • 1 box Hamburger Helper™ cheesy enchilada
  • 1 cup plus 3 tablespoons milk
  • 2 1/4 cups hot water
  • 2 cups shredded deli rotisserie chicken
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, undrained
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 2 cups shredded Mexican cheese blend (8 oz)
  • 8 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce or 1 can (10 oz) Old El Paso™ Medium Red Enchilada Sauce
  • Chopped fresh cilantro, sliced ripe olives, salsa, if desired
Instructions:
  • Preheat the oven to 400°F and generously spray a 13x9-inch (3-quart) baking dish with cooking spray.
  • Combine uncooked rice and sauce mix from the Hamburger Helper box with 1 cup of milk and hot water in a 10-inch nonstick skillet. Bring to a boil, then lower the heat, cover, and simmer for about 15 minutes, stirring occasionally, until the rice is tender and most of the liquid is absorbed. Remove from heat.
  • Combine chicken, chiles, black beans, and 1 cup of cheese in a medium bowl. In a separate small bowl, mix the topping mix (from the Hamburger Helper box) with the remaining 3 tablespoons of milk, cover, and refrigerate.
  • Arrange 3 tortillas in a baking dish, overlapping them as needed and slightly positioning them up the sides of the dish (cut the third tortilla in half if necessary). Spread about half of the chicken mixture, half of the rice, and half of the enchilada sauce over the tortillas. Top with another layer of 3 tortillas, followed by the remaining chicken mixture and rice. Lastly, layer the remaining 2 tortillas over the chicken mixture, slightly overlapping them without going up the sides of the dish. Pour the remaining enchilada sauce over the top and sprinkle with the remaining 1 cup of cheese.
  • Bake without a cover for 15 to 20 minutes, or until the cheese is melted and the casserole is bubbly around the edges. Drizzle with the topping mixture and serve with the remaining ingredients.
