Easy freezer-friendly chicken enchilada casserole with black beans and gooey Monterey Jack cheese. Perfect with rotisserie chicken or homemade.
Ingredients:
  • For the enchilada casserole:
  • 4 cups shredded cooked chicken
  • 1/4 cup taco seasoning, homemade or store-bought
  • 1/2 cup chicken stock
  • 1 (15-ounce) can black beans, drained
  • 3 1/2 cups red enchilada sauce, canned or homemade
  • 24 (6-inch) corn tortillas
  • 16 ounces Monterey Jack cheese, shredded
  • Optional toppings:
  • Sour cream
  • Red onions, sliced
  • Cilantro, chopped
  • Pickled or fresh jalapeños
Instructions:
  • Preheat the oven to 350°F. Grease a 9x13-inch baking dish with cooking spray or a light layer of vegetable oil using a pastry brush.
  • Combine shredded chicken and taco seasoning in a bowl. Add chicken stock and toss until chicken is evenly coated. Mix in drained black beans.
  • Create layers: Start by spreading 2 1/2 cups of enchilada sauce in a pie dish or wide, shallow 1 1/2-quart mixing bowl. Coat 8 corn tortillas, one by one, in the sauce from the bowl. Arrange the coated tortillas in the baking dish, slightly overlapping them to cover the bottom. Add 3/4 cup of shredded cheese on top of the tortillas. Spread half of the shredded chicken on the cheese evenly. Sprinkle another 3/4 cup of shredded cheese over the chicken. Repeat the layering process. Finish with a layer of 8 sauce-coated tortillas. Pour the remaining sauce over the casserole and sprinkle the last of the cheese on top. Cover the dish with foil.
  • Bake the casserole covered for 25 minutes, then uncover and continue baking until the cheese is melted and slightly browned, about 10-12 more minutes.
  • Let the casserole cool down, then garnish and enjoy: Rest the casserole for 10-15 minutes, then slice it into 8 squares. Top the chicken enchilada casserole with sour cream, cilantro, red onions, and jalapeño. Store any leftovers in the fridge for up to 3 days. If you enjoyed the dish, please leave a rating!
