Whip up a delicious creamy chicken fettuccine with sun-dried tomato sauce in just 30 minutes for a perfect dinner for two.
Ingredients:
  • 4 ounces dry fettuccine pasta
  • 1 pound chicken tenders
  • 2 teaspoons Cajun seasoning
  • 2 tablespoons butter
  • 1 cup heavy whipping cream
  • 3 tablespoons chopped sun-dried tomatoes
  • 2 green onions, white part only, sliced thinly
  • 1 tablespoon freshly grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon garlic powder
Instructions:
  • Place a large pot on the stove and fill it with lightly salted water. Bring the water to a rolling boil. Add the fettuccine and cook until it is tender but still slightly firm to the bite, approximately 8 minutes.
  • Coat chicken tenders generously with Cajun seasoning in a bowl.
  • In a skillet over medium-high heat, melt butter and brown the chicken for 7 to 8 minutes. Stir in cream, sun-dried tomatoes, green onions, Parmesan cheese, salt, basil, black pepper, and garlic powder. Cook until heated through, about 2 to 3 minutes, stirring occasionally.
  • Drain the fettuccine and top with the chicken and sauce.
