Easy Chicken Flautas

Crispy chicken flautas: Flavorful rolled tacos filled with chicken, fried to perfection. Ideal appetizer.
Ingredients:
  • 0.25 cup butter
  • 0.25 cup all-purpose flour
  • 0.25 cup minced onion
  • 0.25 cup chopped black olives
  • 2 tablespoons lemon juice
  • 1 tablespoon oil
  • 0.25 teaspoon ground paprika
  • 0.125 teaspoon ground black pepper
  • 0.125 teaspoon salt
  • 1.5 cups cooked shredded chicken
  • oil for frying, or as needed
  • 8 flour tortillas
  • toothpicks
Instructions:
  • In a skillet over medium heat, melt butter and stir in flour until smooth. Cook and stir onion until softened, about 5 to 10 minutes. Add black olives, lemon juice, 1 tablespoon oil, paprika, black pepper, and salt; cook and stir until heated through, around 2 minutes.
  • Add the chicken and then cover the skillet, taking it off the heat.
  • Heat oil in a large saucepan or deep fryer over medium-high heat until hot.
  • Wrap the flavorful chicken mixture in the tortillas, then roll them up and fasten with a toothpick.
  • Fry rolled tortillas in hot oil until golden brown, about 2 minutes each batch. Transfer to a paper towel-lined plate using a slotted spoon or tongs, and serve warm.
