Make delicious chicken gyros with marinated chicken, fresh veggies, and creamy tzatziki in warm pita sandwiches.
Ingredients:
  • 1 (16 ounce) container Greek yogurt
  • 1 medium cucumber, peeled and coarsely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon extra-virgin olive oil
  • 1.5 teaspoons dried dill weed
  • 1 teaspoon distilled white vinegar
  • 1 teaspoon lemon juice
  • salt and ground black pepper to taste
  • 4 cloves garlic, minced
  • 1 medium lemon, juiced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon dried oregano
  • 2 teaspoons red wine vinegar
  • 1.25 pounds skinless, boneless chicken breast halves - cut into strips
  • 6 (6 inch) pita bread rounds
  • 1 medium red onion, thinly sliced
  • 0.5 head iceberg lettuce, chopped
Instructions:
  • Prepare all ingredients, ready to create magic in the kitchen.
  • Prepare the flavorful tzatziki by blending yogurt, cucumber, garlic, oil, dill, vinegar, lemon juice, salt, and pepper in a blender until silky smooth. Refrigerate the mixture until ready to use.
  • Prepare the chicken: Combine minced garlic, fresh lemon juice, olive oil, dried oregano, vinegar, salt, and pepper in a spacious glass or ceramic bowl. Add the chicken pieces and mix well until they are fully covered. Seal the bowl with plastic wrap and let it marinate in the fridge for 1 hour.
  • Preheat the broiler and place the oven rack 6 inches below. Line a rimmed baking sheet with foil.
  • Place the marinated chicken on the baking sheet.
  • Broil the chicken in the preheated oven until golden brown and fully cooked, 2 to 4 minutes per side. Move the cooked chicken to a plate and allow it to rest for 5 minutes before serving.
  • As the chicken rests, prepare the gyros: Warm each pita in a large nonstick skillet over medium heat until soft, about 1 minute per side.
  • Place tender warm pitas on a plate and layer with succulent chicken strips, creamy tzatziki sauce, crisp lettuce, juicy tomato slices, and thinly sliced onion for a delightful Mediterranean treat.
