Effortlessly delicious Italian chicken soup with shortcuts.
Ingredients:
  • Shaved parmesan cheese
  • 36.40 gm olive oil
  • 1 medium onion, diced
  • 1 clove garlic, chopped
  • 1 carrot, chopped
  • 2 sticks celery, chopped
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 1020.00 gm (1 litre) chicken style liquid stock
  • 100g small pasta shapes
  • 400g can chickpeas, rinsed and drained
  • 40.00 ml chopped parsley
  • 1 small barbecued chicken, breast meat only, skin removed & shredded
Instructions:
  • In a large saucepan over medium heat, heat oil. Add onion and garlic, cook for 1-2 minutes stirring constantly. Then, add carrot and celery, cook for 3-4 minutes stirring occasionally until softened.
  • Bring diced tomatoes, chicken stock, and 1 cup of water to a boil. Add pasta and stir until boiling. Cook for 8-10 minutes until tender.
  • Combine chickpeas, parsley, and chicken into the mixture, returning it to a simmer and seasoning it to taste. Ensure the soup is thick and hearty. Serve in large bowls, sprinkled with parmesan, alongside crusty bread.
