Easy chicken okonomiyaki recipe

Garlicky sesame chicken stuffed savory pancakes - healthy, easy, and utterly delicious!
Ingredients:
  • 1 red capsicum, halved, deseeded
  • 1 tsp sesame oil
  • 250g Chicken Mince
  • 125g green beans, thinly sliced
  • 75g (1/2 cup) wholemeal plain or spelt flour
  • 40.00 gm chilled water
  • 200g packet fine cut coleslaw
  • 36.60 gm oyster sauce
  • 100g mixed salad leaves
Instructions:
  • Chop one half of the capsicum finely and slice the other half thinly. Divide into separate bowls.
  • In a large non-stick frying pan over high heat, heat the oil. Brown the chicken for 5 minutes, breaking up any lumps with a wooden spoon. Add beans, garlic, and chopped capsicum. Cook for 3 minutes until softened. Allow to cool for 5 minutes before serving.
  • Combine the flour, eggs, and water in a large bowl and whisk until smooth and well combined. Season to taste.
  • Combine the coleslaw and chicken mixture with the flour mixture and stir well. Clean the pan and spray with oil. Heat over medium-high heat. Add 1⁄2 cupfuls of the mixture to the pan in batches. Flatten into 1cm-thick discs using the back of a spoon. Cook each side for 3 minutes or until golden. Repeat to make 8 pancakes.
  • Drizzle the savory oyster sauce generously over the pancakes and serve with fresh sliced capsicum and crisp salad leaves alongside.
