Prepare ultra-spicy red chicken curry with habanero, Indian jwala peppers, and bold curry seasonings. Handle hot chiles with gloves for maximum flavor and heat.
Ingredients:
  • 3 tablespoons ghee (clarified butter)
  • 1 red onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 (4 inch) piece fresh ginger, finely chopped
  • 1.5 pounds skinless, boneless chicken breast halves, cut into bite-size pieces
  • 1 teaspoon ground fennel seed
  • 1.25 teaspoons lal mirchi (ground Indian red chile pepper)
  • 1.25 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 0.25 teaspoon ground ginger
  • 14 teaspoons ground fenugreek
  • 0.25 teaspoon ground turmeric
  • 0.25 teaspoon ground cardamom
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon ground cloves
  • 6 tablespoons water, divided
  • 5 fresh red jwala chiles, finely chopped (use gloves)
  • 7 habanero chiles, finely chopped (use gloves)
  • 4 roma (plum) tomatoes, finely chopped
Instructions:
  • In a large heavy skillet over medium heat, heat ghee until shimmering. Sauté red onion in the ghee until it starts to brown, about 8 minutes. Add garlic and fresh ginger, and cook until fragrant, about 1 minute. Add chicken pieces and cook until lightly golden brown, about 10 minutes.
  • Combine ground fennel, lal mirchi, cumin, coriander, ground ginger, fenugreek, turmeric, cardamom, cinnamon, cloves, and black pepper in a bowl. Add 1 to 2 tablespoons of water to create a paste. Mix this spice paste with the chicken and fry for 2 minutes. Pour in the remaining 1/4 cup of water and continue to fry the chicken and spices until almost all the water has evaporated, about 7 to 8 minutes, stirring constantly to avoid burning the spices.
  • Combine the jwala chiles, habanero chiles, and tomatoes in the pan. Cook, stirring frequently, until the tomatoes are softened and beginning to break down, approximately 10 minutes. If chicken isn't fully cooked, add more water gradually, cooking until the water evaporates and the chicken is fully cooked.
