Bake tangy marinated chicken with lemon, garlic, mushrooms, and olives for a delicious twist on chicken Vesuvio.
Ingredients:
  • 6 medium new potatoes, quartered
  • 4 (6 ounce) skinless, boneless chicken breast halves
  • 2 teaspoons olive oil
  • 0.25 cup fresh lemon juice
  • 2 teaspoons fresh rosemary, minced
  • salt and pepper to taste
  • 0.125 cup green onions, chopped
  • 0.125 cup pitted black olives, sliced
  • 0.5 cup mushrooms, sliced
Instructions:
  • In a casserole dish, combine potatoes and chicken. Drizzle with olive oil and lemon juice, then sprinkle with rosemary, garlic, salt, and pepper. Cover and chill in the fridge for at least 30 minutes.
  • Begin by preheating your oven to a toasty 400 degrees F (200 degrees C), then generously sprinkle some fresh green onions over the succulent chicken.
  • After baking covered for 30 minutes, enhance the dish by adding olives and mushrooms before returning it to the oven for another 30 minutes.
  • Arrange the chicken and vegetables beautifully on a platter, then drizzle the delicious pan juices over the top. Serve and enjoy!
