Roasted chicken quarters with caramelized onion, mustard, and lemon sauce - a quick, healthy twist on Senegalese Chicken Yassa.
Ingredients:
  • 2 bay leaves
  • 4 chicken quarters (thighs and legs attached)
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic granules or garlic powder
  • 2 teaspoons ground black pepper, divided
  • 2 teaspoons of dried parsley, divided
  • 4 large onions, thinly sliced
  • 3 cloves of garlic, minced
  • 3 tablespoons Dijon mustard
  • 1 lemon, juiced
  • 2 tablespoons of olive oil
  • 1 1/2 cups chicken stock
  • 1/4 cup green olives
Instructions:
  • Heat your oven to 400°F.
  • Score the chicken by creating two slits - one at the leg end and one at the thigh end - to enhance the flavor absorption of the seasoning.
  • Prepare a flavorful marinade by mixing salt, cayenne pepper, garlic granules, 1 teaspoon black pepper, and 1 teaspoon dried parsley in a small bowl. Season the chicken generously on both sides with the spice mix in a large bowl. Cover with plastic wrap and marinate for 10 minutes.
  • Combine onions, garlic, Dijon mustard, remaining dried parsley, black pepper, and lemon juice in a large mixing bowl for a flavorful base.
  • Roast the chicken quarters on a sheet pan at 400°F for 20 to 30 minutes until golden brown, crispy, and the juices run clear or the thermometer reads 165°F-175°F when inserted into the thickest part of the chicken.
  • To make the onion mustard sauce, heat 2 tablespoons of olive oil in a large pan over medium heat. Saute the onion mustard mixture for about 10 minutes until the onions are translucent and golden-brown. Stir in chicken stock, bay leaves, and olives. Simmer over medium-low heat for 5 minutes until the onions are caramelized and the sauce thickens slightly.
  • Nestle cooked chicken quarters into the flavorful onion mustard sauce using tongs. Simmer for 5 to 7 minutes before turning off the heat, transforming the dish into a rich stew.
