Indulgent chocolate-raspberry cream cheese pie, perfect for Valentine's Day.
Ingredients:
  • 6 ounces cream cheese, softened
  • 1 (14 ounce) can sweetened condensed milk
  • 1 large egg
  • 3 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup frozen raspberries
  • 1 chocolate crumb pie crust
  • 0.25 cup heavy whipping cream
  • 2 (1 ounce) squares semi-sweet baking chocolate
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking environment.
  • In a large bowl, whip cream cheese until fluffy. Gradually blend in condensed milk until smooth, then mix in egg, lemon juice, and vanilla extract until well combined.
  • Layer the bottom of the pie crust with fresh raspberries and gently drizzle the cream cheese mixture over the top.
  • Bake in the oven just until the center is nearly set, for around 30 to 35 minutes. Allow it to cool completely, which should take about 30 minutes.
  • In a small saucepan over gentle heat, melt and stir together cream and chocolate until smooth, for about 3 to 5 minutes. Pour the luscious chocolate glaze over the chilled pie and refrigerate until serving time.
