Indulgent cranberry cheesecake with macadamia nut crust, a holiday hit.
Ingredients:
  • 0.75 cup graham cracker crumbs
  • 0.5 cup chopped macadamia nuts
  • 0.25 cup melted margarine
  • 2 tablespoons white sugar
  • 0.25 cup cold water
  • 1 (.25 ounce) envelope unflavored gelatin
  • 2 (8 ounce) packages cream cheese, softened
  • 1 (7 ounce) jar marshmallow creme
  • 1 (16 ounce) can whole berry cranberry sauce
  • 1 cup frozen whipped topping (such as Cool Whip®), thawed
Instructions:
  • Preheat oven to 350°F (175°C) for perfect baking results.
  • Combine graham cracker crumbs, macadamia nuts, melted margarine, and sugar in a bowl. Press the mixture firmly onto the bottom of a 9-inch springform pan.
  • Bake in the oven until the crust is lightly browned, approximately 10 minutes. Allow the crust to cool.
  • Combine the water and gelatin in a saucepan and gently heat over low heat until the gelatin is completely dissolved, which should take about 3 to 4 minutes.
  • In a large bowl, use an electric mixer to blend cream cheese and marshmallow cream until smooth. Slowly add gelatin mixture and cranberry sauce, then gently fold in whipped topping. Pour the cheesecake mixture over the crust and refrigerate until set, about 1 hour.
