Fluffy vegan pancake recipe to delight your family.
Ingredients:
  • 1 cup soy milk
  • 0.33333334326744 cup vegetable oil
  • 0.5 teaspoon white vinegar
  • 0.5 teaspoon vanilla extract
  • 2 tablespoons white sugar, or to taste
  • 1.5 teaspoons baking powder
Instructions:
  • In a large bowl, mix together soy milk, oil, vinegar, and vanilla extract. Allow the mixture to rest until the soy milk begins to curdle, approximately 5 minutes.
  • In a separate bowl, mix flour, sugar, baking powder, and salt. Create a well in the center and pour in the soy milk mixture. Whisk until smooth.
  • Preheat a greased frying pan over medium heat, then cook pancakes until edges are golden brown and bubbles form in the center, about 3-4 minutes. Flip and cook for an additional 3 minutes.
