Elevate your summer meal with flavorful grilled veggies marinated in zesty Italian dressing. Simply grill squash, bell peppers, and onions for 10-15 mins. Customize with your favorite veggies for a quick and versatile dish.
Ingredients:
  • 12 pattypan squash, about 1 inch in diameter
  • 2 red or green bell peppers, each cut into 6 pieces
  • 1 large red onion, cut into 1/2-inch slices
  • 1/3 cup Italian dressing
  • Freshly ground pepper, if desired
Instructions:
  • Arrange vegetables in a 13x9x2 inch rectangular baking dish. Drizzle dressing over the vegetables. Cover and allow to sit for 1 hour to let the flavors meld together.
  • Preheat grill for direct heat. Take the vegetables out of the marinade and set the marinade aside. Put the vegetables in a grill basket or directly on the grill rack.
  • Grill vegetables uncovered over medium heat for 10 to 15 minutes, turning and basting with marinade a few times, until they are tender-crisp. Season with pepper to taste.
