Easy lamb pilaf

Create a flavorful lamb pilaf that will impress your family with its delightful aroma.
Ingredients:
  • 1 onion, sliced
  • 18.20 gm olive oil
  • 2 tsp ras el hanout (see note) or Moroccan seasoning
  • 500g lamb fillet, diced
  • 250g basmati rice
  • 500ml vegetable stock
  • 50g dried apricots, chopped
  • 400g canned chickpeas, rinsed, drained
  • 20.00 ml toasted pine nuts*
  • Mint leaves, to serve
  • Tzatziki, to serve
  • Flatbread, to serve
Instructions:
  • In a deep non-stick frypan over medium heat, heat oil. Add onions and cook for 5 minutes until they are just turning golden.
  • Sear lamb with a sprinkle of spice for a burst of flavor, stirring until meat is golden brown, about 2-3 minutes.
  • Combine rice with rich and flavorful stock; let it simmer gently until the grains are tender and have absorbed most of the liquid. Finally, fold in the sweet apricots, hearty chickpeas, and crunchy pine nuts before serving.
  • Top with fresh mint for a pop of color and serve alongside creamy tzatziki and warm flatbread.
