Create an effortless, impressive roast lamb dish.
Ingredients:
  • 800g packet frozen oven-roast potatoes
  • 250g frozen baby carrots
  • Olive oil spray
  • 8 lamb cutlets (untrimmed)
  • 42.00 gm mint sauce
  • 20.00 ml fresh rosemary sprigs
  • 250g frozen green beans
Instructions:
  • Preheat your oven to 220C (200C fan). Place potatoes and carrots in a baking dish, then generously spray with oil. Bake for 20 minutes before lowering the heat to 200C (180C fan).
  • In a hot non-stick frying pan, sear cutlets in batches until golden brown on each side. Place over vegetables, brush with mint sauce, and garnish with rosemary sprigs.
  • Place the dish back in the oven for an additional 10 minutes to cook the meat. Serve alongside green beans prepared as per the package instructions.
