Easy lemon ricotta mousse

Wow your guests with this simple yet elegant lemon ricotta mousse paired with zesty lemon curd.
Ingredients:
  • 200g fresh ricotta
  • 200g crème fraîche
  • 24.00 gm icing sugar
  • 1 tsp vanilla bean paste
  • 160g (1/2 cup) lemon curd, stirred to loosen, plus extra, to serve
  • 45g (1/4 cup) Vienna almonds, chopped
  • Fresh blueberries, to serve
  • Edible fresh violets, to serve (optional)
  • Fresh mint leaves, to serve (optional)
Instructions:
  • Beat the ricotta in a bowl using electric beaters until smooth. Mix in the crème fraîche, icing sugar, and vanilla, beating until slightly thickened. Gently fold in the lemon curd.
  • Dollop a generous amount of lemon curd into each of the four 125ml (1/2 cup) serving glasses. Top with the ricotta mousse and refrigerate for 2 hours, or until set.
  • Garnish with almonds, blueberries, and optional violets and mint before serving.
