A delicious and fast dish loved by my husband. Easily customizable with ingredients on hand. Swap white wine for heavy cream if desired.
Ingredients:
  • 6 (8 inch) whole wheat tortillas
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 shallots, finely chopped
  • 0.5 pound fresh mushrooms, sliced
  • 0.25 cup dry white wine
  • 1 (15 ounce) can brown lentils
  • 1 (4 ounce) package feta cheese, crumbled
  • 0.25 cup chopped kalamata olives
  • 0.5 cup chopped tomatoes
Instructions:
  • Preheat your oven to 250 degrees F (120 degrees C). Wrap the tortillas in foil and bake for about 10 minutes until they are warmed and softened.
  • In a saucepan over medium heat, saute garlic, shallots, and mushrooms in olive oil until lightly browned, about 5 minutes. Deglaze with wine, scraping up any browned bits. Add lentils and cook for 2 minutes until heated through.
  • Place a generous amount of the flavorful lentil filling onto each tortilla, then carefully fold or roll them. Finish by sprinkling a layer of tangy feta cheese, briny olives, and juicy tomatoes on top.
