Cheesy keto cauliflower mac 'n cheese - a delicious low-carb twist on a classic favorite, perfect for vegetarians.
Ingredients:
  • 1 head cauliflower, cut into florets
  • 1 teaspoon salt
  • 1 teaspoon mixed herbs
  • 0.5 teaspoon ground black pepper
  • 3 tablespoons olive oil
  • 1 cup shredded Cheddar cheese
  • 0.5 cup heavy whipping cream
  • 1 tablespoon ghee (clarified butter)
  • 1 pinch ground nutmeg
  • 3 tablespoons grated Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and prepare a baking sheet by lining it with aluminum foil.
  • Place the cauliflower on the baking sheet and season with salt, herbs, and pepper. Drizzle with olive oil and toss until fully coated.
  • Roast until golden and crispy in a preheated oven for 10 to 15 minutes, then transfer to an 8-inch baking dish.
  • In a saucepan over medium heat, melt Cheddar cheese, heavy cream, ghee, and nutmeg until bubbly, about 5 minutes. Drizzle over cauliflower and stir to combine. Finish with a sprinkle of Parmesan cheese.
  • Bake until beautifully golden in the preheated oven for approximately 10 minutes.
