Mexican quinoa loaded with taco seasoning, tomatoes, beans, Cheddar cheese, and sour cream - a flavorful dinner delight!
Ingredients:
  • 1 onion, diced
  • 0.5 cup quinoa
  • 1 ounce taco seasoning mix
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 0.5 cup shredded Cheddar cheese
  • 0.25 cup sour cream
Instructions:
  • In a saucepan over medium-high heat, sizzle onions in hot oil until slightly softened for 1 to 2 minutes. Toss in quinoa and taco seasoning, cooking until aromatic, about 1 minute.
  • Add water to quinoa and bring to a boil. Simmer with the lid on for 15 minutes. Mix in beans and tomatoes, cover, and simmer for an additional 5 minutes until quinoa is tender. Stir in Cheddar cheese, then serve in bowls with sour cream on top.
