Homemade pickled beets: roasted or boiled beets marinated in tangy cider vinegar vinaigrette—a midwestern favorite!
Ingredients:
  • 1 bunch (4 or 5) beets
  • 1/4 cup cider vinegar
  • 1 tablespoon sugar
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon dry mustard
  • Salt and pepper
Instructions:
  • Prepare and cook the beets: Remove and set aside the greens for later use. Scrub the beets to remove any dirt. For boiling method, place the beets in a saucepan, cover with water, and simmer for 35 to 45 minutes until tender. For roasting method, rub beets with olive oil, wrap in foil, and roast in a 400°F oven for about an hour until tender. Allow beets to cool.
  • Peel the beets and cut into quarters or slices after boiling. Rinse beets with cold water to cool. Peel off easily with your fingers and discard. Cut into quarters or slices.
  • Prepare the vinaigrette by whisking together cider vinegar, sugar, olive oil, and dry mustard to create a flavorful dressing. Adjust the seasoning with salt and pepper as needed. Toss the beets in the vinaigrette, let them marinate at room temperature for 30 minutes, then refrigerate. Enjoy the delicious results and consider leaving a review!
