Effortless pineapple upside-down cake using biscuit mix for a quick and tasty twist on a beloved dessert.
Ingredients:
  • 0.25 cup butter
  • 0.25 cup packed brown sugar
  • 1 (15 ounce) can pineapple chunks, drained
  • 2 tablespoons chopped pecans
  • 1.5 cups biscuit baking mix (such as Bisquick®)
  • 0.5 cup white sugar
  • 0.5 cup milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 large egg
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfectly heated cooking environment.
  • Preheat oven. Place a 9-inch baking pan in the oven with butter until melted. Remove pan from oven.
  • Evenly scatter the brown sugar over the butter in the pan.
  • Spread pineapple chunks in an even layer over the butter and brown sugar, then top with pecans; let sit.
  • Mix biscuit baking mix, white sugar, milk, oil, vanilla, and egg in a large bowl on low speed for 30 seconds, making sure to scrape the bowl constantly.
  • Beat the batter on medium speed until smooth, about 4 minutes longer.
  • Gently drizzle the batter on top of the pineapple mixture.
  • Bake in the oven until a toothpick inserted in the center comes out clean, about 30-35 minutes.
  • Use a paring knife to gently loosen the cake from the edges of the pan. Place a plate over the pan and flip it to release the cake onto the plate. Allow it to cool for at least 10 minutes before serving.
