Pumpkin-spiced rice with brown sugar - a delightful side dish!
Ingredients:
  • 4 cups instant rice
  • 4 cups water
  • 1 (29 ounce) can pumpkin puree
  • 1.5 teaspoons pumpkin pie spice
  • 1.5 cups brown sugar
  • 0.5 cup butter
  • salt to taste
Instructions:
  • In a large saucepan, simmer rice and water until fully absorbed, about 15 to 20 minutes. Cover after boiling and reduce heat to medium-low.
  • Combine the pumpkin puree, pumpkin pie spice, brown sugar, butter, and salt in a separate saucepan over medium-low heat until warm. Then, stir the pumpkin mixture into the cooked rice.
