Delicious rhubarb pie with sweet crumb topping and tart custard filling, ideal for a spring treat.
Ingredients:
  • 1 cup white sugar
  • 1 egg
  • 0.5 teaspoon vanilla extract
  • 0.75 cup all-purpose flour
  • 0.5 cup brown sugar
  • 0.33333334326744 cup butter, softened
  • 2 cups 1-inch pieces rhubarb
  • 1 (9 inch) unbaked pie crust
Instructions:
  • Preheat the oven to 350°F (175°C) to create the perfect cooking environment.
  • Combine white sugar, 2 tablespoons of flour, egg, and vanilla in a small bowl until well mixed.
  • Combine 3/4 cup flour, brown sugar, and butter in a small bowl and mix until you have a crumbly mixture.
  • Arrange the rhubarb in the pie crust, then drizzle with the white sugar mixture and sprinkle with the brown sugar mixture.
  • Bake until the filling is bubbly and the crust is golden brown, for 30 to 40 minutes in the preheated oven.
