Create bakery-worthy cookies with royal icing! Our recipe and decorating tips will elevate your holiday and celebration treats.
Ingredients:
  • For the basic icing:
  • 3 ounces (6 tablespoons or 3 large) pasteurized egg whites
  • 1 teaspoon vanilla extract, or another flavored extract
  • 4 cups (460 g or 1 pound) powdered sugar
  • To finish:
  • Food coloring of your choice
  • Additional powdered sugar to thicken icing
  • Water to thin icing
  • Sprinkles
Instructions:
  • In a stand mixer bowl or regular bowl, combine the egg whites and vanilla extract. Whisk on medium speed until frothy, about 15 to 20 seconds.
  • Sprinkle 1 cup of powdered sugar over the egg whites. Ensure to sift it in for a smooth texture. Mix on medium speed until sugar is fully absorbed, scraping down the sides to incorporate all the sugar. Repeat this process three more times with 1 cup of powdered sugar each time, ensuring everything is well blended.
  • To check icing thickness: Lift the whisk and observe how long it takes for the icing thread to blend into the surface. Aim for a piping consistency of 8 to 10 seconds. If not thick enough, gradually sift in 1 tablespoon of powdered sugar, stirring until desired thickness is achieved. Repeat if needed.
  • To color the icing, divide it into separate bowls for each color desired. Add food coloring to each bowl. Adjust thickness by adding more sifted powdered sugar for piping, or water for flooding. For flooding consistency, check by drizzling icing in the bowl; it should melt back in after 2-3 seconds. If it disappears immediately, add more powdered sugar.
  • Enhance your cookies: Fill a piping bag with a #3 tip or smaller and add the frosting. Create outlines or designs on your cookies, then use the flooding icing to fill them in, if you prefer.
  • Let the cookies dry: Allow the icing to completely dry for at least 2 hours with a gentle fan or overnight. Store the cookies between parchment in an airtight container for up to 5 days. If you enjoyed this recipe, we'd love to hear your feedback with a rating and review!
