Exciting salsa rice with corn, sauteed onions, and zesty pepper Jack cheese - perfect for Spanish or Mexican meals!
Ingredients:
  • 2 cups white rice
  • 1 cup frozen corn
  • 1 teaspoon olive oil
  • 0.5 cup chopped onion
  • 1 cup salsa
  • 1 cup shredded pepper Jack cheese
Instructions:
  • In a saucepan, bring water and rice to a lively boil. Lower the heat to medium-low, cover, and let it simmer until the rice is tender and has absorbed all the liquid, which should take about 20 to 25 minutes. Add frozen corn during the last 5 minutes of cooking.
  • While the rice is cooking, heat oil in a skillet over medium heat, then sauté the onion until softened and translucent, about 5 minutes.
  • Fold sautéed onions into the fluffy rice and sweet corn blend. Gently mix in zesty salsa and smoky pepper Jack cheese.
