Savory slow cooker beef stew with rich onion soup mix, hearty veggies, and a splash of red wine, comforting for chilly weather.
Ingredients:
  • 3 pounds cubed beef stew meat
  • 0.25 cup all-purpose flour
  • 0.5 teaspoon salt, or to taste
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 3 onions, sliced
  • 0.25 cup red wine
  • 4 large potatoes, cubed
  • 1 cup baby carrots
  • 1 tablespoon dried parsley
  • 1 teaspoon ground black pepper
  • 2 cups boiling water
  • 1 (1 ounce) package dry onion soup mix
  • 0.25 cup warm water
  • 2 tablespoons all-purpose flour
Instructions:
  • In a large plastic bag, add the meat. In a small bowl, mix 1/4 cup flour with salt. Pour the flour mixture into the bag with the meat and shake well to coat the meat evenly.
  • In a large skillet over medium-high heat, warm up some olive oil. Brown the floured meat evenly on the outside, working in batches if needed. Transfer the meat to a slow cooker.
  • In the same skillet, melt butter. Sauté onions until softened. Transfer to the slow cooker. Deglaze the skillet with red wine, scraping up all the flavorful browned bits. Pour this mixture into the slow cooker.
  • Place potatoes, carrots, parsley, and pepper in the slow cooker. Combine 2 cups boiling water with dry soup mix in a small bowl, then pour into the slow cooker.
  • After 30 minutes on High, switch to Low heat and simmer for 6 hours until the meat is tender. Combine 1/4 cup warm water with 2 tablespoons of flour in a small bowl, then add to the stew. Cook without a lid until it thickens, for about 15 minutes.
