Spinach and ricotta vegetarian lasagna topped with mozzarella and Parmesan.
Ingredients:
  • 9 lasagna noodles
  • 1 bunch fresh spinach
  • 1 (8 ounce) container ricotta cheese
  • 0.5 cup shredded mozzarella cheese
  • 1 egg, lightly beaten
  • 1 pinch ground nutmeg
  • 1 pinch dried basil
  • salt and ground black pepper to taste
  • 1 cup pasta sauce
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and generously spray a 1 1/2-quart casserole dish with cooking spray.
  • Bring a large pot of salted water to a boil. Cook lasagna for about 8 minutes until al dente, then drain.
  • Place a steamer insert in a saucepan with water just below it. Bring to a boil. Steam spinach covered until tender, for 2 to 6 minutes. Drain.
  • Combine spinach, ricotta cheese, 1/2 cup mozzarella cheese, egg, nutmeg, basil, salt, and black pepper in a bowl until fully mixed.
  • Begin by smearing a layer of 1/4 cup pasta sauce on the bottom of your casserole dish. Add 3 lasagna noodles, half of the ricotta mixture, and another 1/4 cup of pasta sauce. Continue with 3 more noodles, the remaining ricotta mixture, and another 1/4 cup of pasta sauce. Finish off with the last 3 lasagna noodles, 1/4 cup of pasta sauce, and a generous sprinkle of 1/2 cup mozzarella cheese and Parmesan cheese. Cover the casserole with aluminum foil.
  • Preheat the oven and bake the casserole for 25 minutes. Uncover and bake until the lasagna is bubbling and lightly browned, for about 25 more minutes. Allow the lasagna to rest for 5 minutes before serving.
